1 lb. cooked meat (lightly seasoned with salt & pepper)

1 dozen corn tortillas

1 to 1½ lb. shredded cheese (double it if you’re making cheese-only enchiladas)

1 jar of Roselle enchilada sauce

Optional: sliced onions & olives
HOW IT’S MADE
There’s nothing quite like a warm dish of homemade enchiladas. This recipe keeps it simple, classic, and delicious — perfect for a cozy night in or serving up to the whole family.

Preheat oven to 350°F.

Fill tortillas with meat and cheese.

Roll them up and place seam-side down in a baking dish.

Pour 1 jar of Roselle enchilada sauce over the rolled tortillas.

Top with more cheese (and onions/olives if you’d like).

Bake uncovered for ~30 minutes, until cheese is bubbling.
